As a kid I was super secretive. I wanted to have a recipe that was MINE. Top Secret and no one was ever allowed to know how to make “Nikky’s Famous Rice Pudding.” Little did they know, I found this recipe on the back of a Domino’s Sugar Bag. I memorized it by heart and always left everyone imagining, “where did she learn this?”.
1 Egg
1 Cup of Granulated Sugar
1 Cinnamon Stick
2 Tablespoons of Vanilla
1 Cup of Raisins
1 Tablespoon of Nutmeg ( or however much you want)
1 1/2 Cups of Rice
2 Cups of Whole Milk
Measure out 4 cups of milk into a saucepan over medium heat. Place the cinnamon stick inside with the milk. Wait until the steam rises before pouring in the rice. Make sure to continuously stir or the rice will stick to the bottom of the pan. As the rice continues to boil in the milk, cover it with a lid and turn the heat down to medium. This should take about twenty minutes) Keep checking on the rice. In the meantime, add all of your other ingredients together in a separate bowl. Once the rice has thickened and the milk is mostly all soaked up, change the temperature to low. Mix in the remaining ingredients and let the rice continue to simmer on low for another 3-5 minutes.
